Give your breakfast chia pudding a tropical twist with the Brazilian superfood acai. For a super quick morning pick-me-up, prep the chia seeds the night before.
- 50g of chia seeds
- 180ml of rice milk
- ½ tsp of vanilla essence
- 170g of frozen berries
- 70g of frozen acai pulp
- 1 banana
- 100ml of rice milk
- Desiccated coconut, to serve
- Put the chia seeds, rice milk and vanilla essence in a bowl and soak for two to three hours or, ideally, overnight.
- Make the acai layer by putting the acai, frozen berries, 100ml of rice milk and banana into a blender and blend to a thick smoothie texture.
- To serve, layer the chia pudding and acai and top with frozen berries and desiccated coconut.
