Prep Time: 10 Minutes | Soaking Time: 2-3 Hours 

Serves 2-3 

Give your breakfast chia pudding a tropical twist with the Brazilian superfood acai. For a super quick morning pick-me-up, prep the chia seeds the night before.


  • 50g of chia seeds
  • 180ml of rice milk
  • ½ tsp of vanilla essence
  • 170g of frozen berries
  • 70g of frozen acai pulp
  • 1 banana
  • 100ml of rice milk
  • Desiccated coconut, to serve


  1. Put the chia seeds, rice milk and vanilla essence in a bowl and soak for two to three hours or, ideally, overnight.
  2. Make the acai layer by putting the acai, frozen berries, 100ml of rice milk and banana into a blender and blend to a thick smoothie texture.
  3. To serve, layer the chia pudding and acai and top with frozen berries and desiccated coconut.
