Calgary's Cranberry & Pistachio Bark

Making your own chocolate is impressive enough, and these flavours make this fruit and nut bark a delectable treat. Keep in the fridge and get out whenever you have guests, plus, for a homemade present, this cranberry and pistachio bark is ideal wrapped in a clear plastic bag with some ribbon. 


  • 250g of raw cacao butter
  • 100g of cacao powder
  • 2tbsp of maple syrup
  • 1tsp of maldon salt
  • A handful of pistachios
  • A handful of goji berries


  1. On a medium heat, melt the cacao butter in a bain marie or using a glass bowl over a pot of boiling water.
  2. Once it has a liquid consistency, add in the cacao powder. This melts quickly so whisk frequently.
  3. Then add in maple syrup and salt.
  4. When ready, immediately pour the mixture on to a baking sheet covered in parchment paper.
  5. Pour evenly across the tray, the sprinkle the pistachios and goji berries evenly over the top.
  6. Feel free to play around with different toppings if you want - cocnut flakes, almonds, pine nuts and cranberries are all delicious.
  7. Then put in the fridge for two hours to set.
  8. Once ready, break into rough pieces with a knife and serve.
  9. Keep stored in the fridge.
